GOAT CHEES ARTICHOKE DIP image

Number Of Ingredients 6

4 ounces goat cheese (Chevre)
1/2 cup sun dried tomatoes , reconstituted in a little boiling water and then slivered.
1 clove garlic, finely minced
1/2 cup mayonnaise
1 can artichoke hearts (14 oz.) drained and coarsely chopped
freshly ground pepper, to taste

Steps:

  • Combine all ingredients and blend well. Put in a microwave safe casserole dish and cook, covered at medium power for about 4 minutes or until hot. Serve with parmesan crisps, pita chips or toasted baguette slices. *1/2 cup slivered roasted red peppers may be substituted for the sun-dried tomatoes.
