GOOD OL' HOOSIER HAM SALAD image

Another trip down memory lane for me. I grew up on this stuff! I especially love it on toast, and it has to be cut diagonally or it just doesn't taste right! And if you can't have toast, the next best thing is white bread.

Time 15m

Number Of Ingredients 7

3 c finely ground cooked ham
2 Tbsp celery, finely chopped
2 or 3 medium eggs, hard boiled, chopped
4 tsp sweet pickle relish
2 tsp finely chopped onion or 1 tbsp. minced onion
1 c hellman's mayonnaise
1 Tbsp yellow mustard

Steps:

  • 1. Chop the ham in a food processor until it is the consistency you like. I prefer it very finely ground.
  • 2. Mix the ham, celery, eggs, onion and pickle relish in a large bowl.
  • 3. In a separate bowl, combine mayonnaise and mustard; then add to ham mixture. Stir to mix and refrigerate at least one hour.
  • 4. This is good on sandwiches, crackers, or as a dip for vegetables such as carrot sticks or anything else you like.

I'm not sure what went wrong, but my ham salad turned out really bland. I think I'll try a different recipe next time.

The only thing I would change about this recipe is to use less celery. I found that it overpowered the other ingredients.
