GREEN BEANS WITH LEMON & PINE NUTS image

Number Of Ingredients 7

1/4 c. pine nuts
2 12-oz. bags frozen green beans
2 T finely chopped fresh parsley
1 1/2 tsp. grated fresh lemon peel
1 T fresh lemon juice
2 tsp. olive oil
1/4 tsp. salt if desired

Steps:

  • Place a dry skillet over medium to high heat. Add pine nuts and stir often until they are golden in color. Remove pine nuts from skillet. Cook the green beans according to the manufacturer's directions. Drain the water from the beans. Add pine nuts, parsley, lemon peel, lemon juice and olive oil. Toss the vegetables with the seasonings until evenly mixed. Serves 8.
