GREEN CHILE FRITTATA image

10 eggs, beaten
1/2 C Flour
1 tsp. baking powder
dash of salt 1 70z can diced green chiles, drained
1 16 0z contained of light cottage cheese
1 Cup shredded cheddar cheese
1/4 Cup melted butter

Steps:

  • 1. Preheat oven to 400@ and lightly grease a 13/9"pan 2. In a large bowl mix the eggs, flour, baking powder and salt. Stir in the green chiles, cottage cheese, cheddar cheese and melted butter and pour into prepared dish. Bake for 15 minutes @400 and then reduce heat to 325@ and continue to bake for 35-40 minutes more. Cool slightly and cut into shares.
