GREEN RICE W/HATCH CHILES image

Number Of Ingredients 9

1 large onion, chopped
4 cloves garlic, chopped
4 Hatch or green chiles, roasted, seeded and chopped
1 Bell pepper, seeded and chopped
1 1/2 cup long grain white rice
2 1/2 cups of chicken stock
2 Tbsp of pumpkin or sesame seeds, toasted
Salt, pepper to taste
1/4 tsp each cayenne,paprika, chili powder

Steps:

  • In a large skillet, heat 3 Tbsp vegetable oil. Add the onion, garlic and chiles and saute for 3-4 minutes. Add the rice and bell pepper and saute for another 3-4 minutes. Add seasonings and stir well. Add the chicken stock, bring the mixture to a boil. Reduce the heat and simmer uncovered for around 15 minutes or until the rice is tender and the water has been absorbed....transfer to a serving bowl and sprinkle the toasted seeds on top.........you're ready to serve........yum......
