Harry Potter's Gillyweed Balls image

2 (10 ounce) packages frozen chopped spinach, thawed and well-drained
1 cup parmesan cheese, grated
1/2 cup butter, melted
4 green onions, finely chopped
4 eggs, lightly beaten
salt and pepper
1 -2 cup italian-style seasoned bread crumbs

Steps:

  • Preheat oven to 350°F
  • In a medium bowl combine spinach, cheese, butter, green onions, eggs, salt and pepper and just enough bread crumbs to make the mixture hold together.
  • Shape into 1-inch balls.
  • Arrange in a single layer on a large baking sheet.
  • Bake 10 to 15 minutes until lightly browned.
