Hawaiian Chicken Salad image

Cold chicken salad, Hawaiian style, with the flavors of pineapple, mango, and macadamia nuts. Easily made with leftover cooked chicken.

Number Of Ingredients 9

1 lb smoked chicken or grilled chicken
8 oz can crushed pineapple
1 c diced celery
2 oz jar diced pimiento peppers, drained
1/4 c mango chutney
1/2 c mayonnaise
salt and black pepper to taste
1/2 c macadamia nuts, chopped
1 Tbsp fresh italian parsley, minced

Steps:

  • 1. Chop chicken into chunks. I use leftover smoked or grilled chicken from the barbecue, but rotisserie is also fine.
  • 2. Stir chicken up with the rest of the ingredients and serve.
