Time 50m

Number Of Ingredients 12

1 lb chicken breast
1 large red bell pepper
1 medium onion
6 oz fresh or frozen snow peas
1/2 c dry roasted peanuts
1/3 c hoisin sauce
salt and pepper to taste
2 Tbsp water
1 tsp crushed red pepper flakes
sugar to taste
2 tsp dry or freshly grated ginger
3 Tbsp peanut oil

Steps:

  • 1. Thinly slice bell pepper and onions. Cut chicken breasts into bite sized cubes, and lightly coat with salt and pepper. In a wok on medium high heat, fry thinly sliced bell pepper and thinly sliced onion in 2 tablespoons peanut oil until onions are slightly brown and peppers are soft. This will take about 5-7 minutes. Remove from wok and set aside.
  • 2. Add 1 tablespoon oil to wok and fry up chicken breast cubes until cooked. Stir in the ginger, red pepper flakes and snow peas, and add the previously fried bell pepper an onion back in. Fry until snow peas slightly soften.
  • 3. Reduce heat to medium low and stir in the hoisin sauce, water and peanuts. Cook for five minutes. Add sugar or artificial sweetener to taste. Serve over rice.

I'm not a huge fan of hoisin sauce, but this recipe was surprisingly good. The sauce was not too overpowering and the chicken was cooked perfectly. I would definitely make this again.

This was a great recipe! I used a little less hoisin sauce than the recipe called for, and it was still plenty flavorful. The chicken was cooked perfectly and the vegetables were crisp-tender. I will definitely be making this again.
