Steps:
- Mix together popped corn and peanuts in a very large oven-safe bowl. Keep warm in a 250- degree oven. Melt margarine in a heavy 2-quart saucepan. Stir in brown sugar, corn syrup and salt. Bring to a rolling boil, stirring constantly. Boil, without stirring, 5 minutes. Remove from heat. Stir in baking soda and vanilla. Quickly pour over popcorn-peanut mixture, tossing until kernels and nuts are well-coated. Spread out in shallow baking pan. Bake at 250 degrees for 45 minutes, stirring once or twice. Remove from oven. Turn out on aluminum foil to cool. Break into pieces. Store in tightly covered container. Per cup: 314 cal.; 7 g pro.; 34 g carb.; 18 g fat (3 sat., 9 monounsat., 6 polyunsat.); 0 mg chol.; 198 mg sod.; 3 g fiber; 23 g sugar; 50 percent calories from fat.
