Irish Eggs image

I found this on another website, though I can't for the life of me remember which one. I think it sounds like a great alternative to the usual "Scotch Eggs" though. Give it a try!

These Irish eggs were tasty, but a bit too rich for my taste. I think I'll try using less cream next time.

Delicious! I used free-range eggs and organic cream, which I think made a difference in the taste. Will definitely make again.

My oh my! Those Irish eggs were a breakfast sensation. They were so simple to prepare and incredibly delicious. The creaminess inside the egg paired wonderfully with the crispy bacon strips, while the chives added just the right amount of zing. This
