Number Of Ingredients 8

2 cups flour, unbleached all-purpose
1/4 cup cornmeal
3 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
5 tablespoons butter, unsalted, chilled
3/4 cup evaporated milk, or more as needed
2 cups peanut oil for frying, or as needed

Steps:

  • 1. Combine the flour, cornmeal, sugar, baking powder, and salt in a large mixing bowl. Cut in the butter, using two knives. Alternatively, mix the ingredients in a food processor fitted with a chopping blade. The mixture should feel crumbly, like sand. Add enough evaporated milk to obtain a stiff but pliable dough. Stir just to mix.2. Pinch off walnut-size pieces of dough and roll them between your palms to make long thin ropes. You should have about 24, each one about 10 inches long and 1/4 inch thick. Fold the ropes in half and twist them together.3. Place the oil in a deep-fat fryer or large, deep skillet. Heat over medium-high heat until it reaches 350°F.4. Gently and carefully lower the festivals into the oil and fry, turning with a slotted spoon, until golden brown, 2 to 40 minutes in all. Transfer the festivals to paper towels to drain and serve while still hot.Makes about 24 festivals serves 4 to 6

I've made these festivals several times now and they're always a hit. They're so easy to make and they always turn out perfect. I love serving them with ackee and saltfish, but they're also great on their own.

These festivals were a hit at my party! I made a double batch and they were all gone in minutes. Everyone loved them. They were crispy on the outside and fluffy on the inside, and the flavor was perfect. I will definitely be making these again.

These festivals were a bit too greasy for my taste. I think I might have used too much oil when frying them. Other than that, they were delicious. I served them with ackee and saltfish and they were a hit!

These festivals were a bit of a disappointment. The dough was too dry and the festivals were not as fluffy as I expected. I think I might have overmixed the dough. I'll try again with a different recipe.

These festivals were a great addition to our Jamaican dinner. They were easy to make and tasted delicious. The only thing I would change is to add a little more salt to the dough. Otherwise, they were perfect!
