Steps:
- In a large mixing bowl, combine flour, sugars, cinnamon, baking soda, nutmeg, and salt. In a separate bowl, combine melted butter, oil, eggs, and extract. Stir wet ingredients into dry ingredients until just combined. Fold in apples and pecans. Spoon batter into a greased and floured bundt pan and bake in a 325F oven for 1 hour or until a toothpick inserted in the centre comes out clean. Cool in pan for approximately 15 minutes, unmold and cool on rack. To make caramel sauce, melt butter and sugar over medium heat stirring for about 5 minutes until the sugar is dissolved. Add the cream, stirring as you bring to a boil. Simmer until the mixture is slightly reduced and thickened, about 10 minutes. Slice cake and serve with warm caramel sauce and vanilla ice cream.
