KIM'S SALSA CHICKEN image

Number Of Ingredients 5

2-4 Chicken Breasts (defrosted and cut into Cubes)
Olive Oil
1 Jar Salsa (usually get chunky)
Broccoli (I prefer fresh, but doesn't really matter)
Flour

Steps:

  • In bowl, take cubed chicken and roll into flour. In small bowl, heat up couple tbsp of olive oil, garlic and broccoli (or vegetable of choice). Cook to your liking. In large skillet, heat up a couple of tbsp of olive oil and couple of cloves of garlic. Gradually add cubes of flour-ed chicken. Flip chicken, cook through. Once chicken is fully cooked, add jar of salsa and vegetable. Mix together, heat for additional 3 minutes or so on medium heat. Salsa will thicken once it hits flour on chicken, etc. To serve: I usually serve over brown rice and sprinkle shredded mexican cheese on top.
