Lemon Blackberry Tortilla French Toast image

This twist on crepes is tart-sweet with a creamy lemon filling and juicy blackberries. Think of this as a cross between thin French toast, light crepes and crispy quesadillas. -Arlene Erlbach, Morton Grove, Illinois

I was a little hesitant to try this recipe because I'm not a big fan of blackberries, but I'm so glad I did! The lemon and blackberries were the perfect combination and the tortilla made it so crispy. I'll definitely be making this again.
