Time 20m

Yield 24 cookies, 24 serving(s)

Number Of Ingredients 12

1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 tablespoons butter, room temperature
1/2 cup brown sugar
1 large egg
1/4 cup carrot, finely grated
1/2 teaspoon vanilla extract
2 cups whole grain oats
4 tablespoons skim milk

Steps:

  • Preheat oven to 350F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
  • In a large bowl, cream together the butter and sugar. Beat in the egg, followed by the carrots and vanilla. Using your hands, stir in the flour mixture and the oats until just combined, adding the milk 1 tablespoon at a time until fully combined. This will be really really sticky, don't worry!
  • Drop tablespoonfuls of the dough onto the prepared baking sheet, flattening each cookie slightly. Bake for about 8-10 minutes.
  • Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
  • Store in an airtight container.

I'm not a baker, but these cookies were easy to make and turned out great. I'll definitely be making them again.

I'm allergic to carrots, so I substituted grated zucchini. The cookies turned out great! They're moist and flavorful, and no one could tell there were zucchini in them.

These cookies are too sweet for my taste. I would reduce the amount of sugar next time.

I followed the recipe exactly, but my cookies came out dry and crumbly. I'm not sure what went wrong.

I'm not a huge fan of carrot cake, but these cookies were surprisingly good. The carrot flavor is subtle and the cookies are very moist. I'll definitely make these again.

These cookies were a delightful surprise! I was skeptical about the carrot addition, but the cookies turned out moist, flavorful, and with a hint of sweetness from the carrots. The texture was perfect, with a slight crunch from the oats. I'll definit
