In my quest to make an oatmeal cookie that my husband will eat (he despises raisins and doesn't really like chocolate) I came up with this little number. And it's somewhat healthy, too!

- Preheat oven to 350 degrees.
- Beat together wet ingredients.
- Stir in dry ingredients.
- Drop onto prepared cookie sheet and flatten a bit with a spoon.
- Bake for approximately 8 minutes or until done.
