Low-Fat Oatmeal Apricot Cookies image

In my quest to make an oatmeal cookie that my husband will eat (he despises raisins and doesn't really like chocolate) I came up with this little number. And it's somewhat healthy, too!

3/4 cup sugar
1/2 cup brown sugar, packed
1/3 cup margarine
1/3 cup unsweetened applesauce
2 large eggs
2 teaspoons vanilla extract
1 3/4 cups whole wheat flour
2 cups uncooked rolled oats
1 cup dried apricot, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Beat together wet ingredients.
  • Stir in dry ingredients.
  • Drop onto prepared cookie sheet and flatten a bit with a spoon.
  • Bake for approximately 8 minutes or until done.
