Marinated Shrimp image

Every year we have a Christmas Open House and I make about 20 pounds of this marinated shrimp. It is one of the most popular items I serve. I think some come just to eat the shrimp.

Number Of Ingredients 9

2 lb unpeeled, medium fresh shrimp
6 c salted water
1/2 c sugar
1 1/2 c white vinegar
1 c canola oil
1/4 c capers, undrained
1/2 tsp kosher salt
1 1/2 tsp celery salt
3 medium red or white onions, sliced and separated into rings

Steps:

  • 1. Peel shrimp leaving tails on. De-vein if desired. Bring water to boil; add shrimp and cook 3 minutes or just until shrimp turns pin. Drain and rinse with cold water. Chill.
  • 2. Combine sugar and next 5 ingredients in a shallow dish. Add shrimp alternately with onions. Cover and chill at least 6 hours, turning often. Drain and discard marinade before serving.
