Mexican Chicken Casserole image

Number Of Ingredients 10

1 large onion
2 large tomatos, peeled and chopped
2 c shredded white meat chicken
1/2 c chicken broth
2 tsp chili powder
1 tsp salt
1 tsp ground cumin
1 tsp oregano
1 c shredded cheddar
6 corn tortilla cut in forth's

Steps:

  • 1. preheat oven to 350 degrees. spray 13x9 baking dish with cooking spray
  • 2. saute onion, add tomato, chicken broth, chili powder, salt, cumin, and oregano. Bring to a boil and simmer 5 minutes
  • 3. Layer half of chicken mixture then half tortillas, then half cheese, and repeat. bake 25-30 minutes
