Mimi's Sour Cream Pie image

This very simple pie was a favorite in my step-dad's home. Mimi is his daughter and was given this recipe by her mom. I have tried different variations, ie putting it in a chocolate graham cracker crust, adding his favorite (cherry)pie filling. Whatever I've done, he loves! So, from our house to yours........... enjoy!

I would make this pie again, but I would make a few changes. I would use less sugar in the filling, and I would add a bit of cinnamon.

This sour cream pie was a hit with my family. The crust was flaky and buttery, and the filling was creamy and tangy. I loved the pop of flavor from the lemon zest and vanilla extract.
