The Mojito might just be the quintessential hot-weather cocktail. White rum, lime juice, and lots of fresh mint make for a refreshing combination that mixologist Ivy Mix calls "a universal sign for summer."

Time 10m

Yield 1 serving

Number Of Ingredients 7

1/2 cup mint, leaves only, loosely packed
3/4 ounce simple syrup, heat equal parts sugar and water until sugar dissolves; cool before using
3/4 ounce fresh lime juice
2 ounces white rum, preferably Plantation 3 Stars brand
Crushed ice, divided
Club soda, to top
Mint sprigs, for garnish

Steps:

  • In a tall cocktail glass, add mint leaves and simple syrup. Using a muddler, gently bruise the mint to release the oils. While muddling, keep the mint at the bottom of the glass and avoid breaking up the leaves.
  • To the muddled mint, add lime juice and rum. Add crushed ice to fill glass to three-quarters. Use a swizzle stick or bar spoon to "swizzle" the drink: pull up the mint-infused liquid from the bottom through the ice to the top, making sure to keep the leaves intact at the bottom of the glass. Alternatively, place the swizzle stick in the drink, and twirl it by rubbing the handle between your palms while moving the spoon up and down. Swizzle for about 15 seconds.
  • Add a splash of club soda, then more crushed ice to fill the glass. Smack mint sprigs with your hand to release the natural oils, then garnish the drink with the sprigs and a straw. Serve.

I'm not a big fan of mint, but I still enjoyed this mojito. The lime and simple syrup balanced out the mint flavor perfectly.

This mojito recipe is a great starting point, but I like to add my own personal touches. I often add a splash of grenadine or a squeeze of orange juice.

I tried this mojito recipe with different types of rum, and I found that a light rum worked best. A dark rum overpowered the other flavors.

I found that this mojito recipe was a little too sweet for my taste. I would recommend using less simple syrup or omitting it altogether.
