Steps:
- Rub roast with oil and sprinkle with paprika, garlic powder, salt, and pepper. Place in dutch oven and bake uncovered in 400 degree oven for 45 mins (30 mins for smaller roast). Add sweet peppers and cook covered in 350 degree oven 30 mins. Let cool at least 1/2 hour. Slice thinly and serve with hard rolls and giardinere.
