Mom's Pineapple Cream Cheese Pie image

I was given this recipe by my Mother-in-law who served it every Thanksgiving. It was love at first bite!

Number Of Ingredients 12

1 unbaked pie crust for a 9 inch pie
PINEAPPLE FILLING
2 c crushed pineapple with juice
1/2 c sugar
2 Tbsp cornstarch
CREAM CHEESE FILLING
8oz pkg cream cheese
1/2 c sugar
1/2 tsp salt
2 eggs
1/2 c milk
1/2 tsp pure vanilla extract

Steps:

  • 1. Stir together ingredients for pineapple filling in saucepan. Bring to a boil & cook, stirring constantly, until thick & clear. Cool
  • 2. Beat cream cheese, sugar & salt until smooth & creamy. Add eggs, milk & vanilla & mix well.
  • 3. Spread cooled pineapple mixture in bottom of pie shell. Pour cream cheese mixture on top of pineapple.
  • 4. Bake at 400 degrees for 10 minutes. Lower temperature to 325 & bake for another 50 minutes.
  • 5. Serve chilled.
