1 tablespoon olive oil
1 cup chopped onion
2 medium carrots, chopped
2 stalks celery, chopped
2 cloves garlic, minced
2 teaspoons peeled and minced fresh ginger
1 pound cooked, cubed chicken
1 tablespoon curry powder
3 1/2 cups (two 14.5-ounce cans) reduced-sodium chicken broth
1 14-ounce can unsweetened coconut milk
1/4 cup chopped fresh cilantro
Salt and freshly ground black pepper to taste
2 cups instant rice, cooked

  • Remove from the heat, stir in the cilantro, and season with salt and pepper. Spoon the rice into bowls and top with the mulligatawny stew.

I'm not a big fan of chicken, but I think I might like this stew with beef or lamb instead.

I wonder if you could use different vegetables in this stew. I think sweet potatoes or butternut squash would be a nice addition.

This recipe sounds like it would be really good with some crusty bread.

I'm not sure what I did wrong, but my stew turned out really bland. I followed the recipe exactly, but it just didn't have any flavor.

This stew was a bit too spicy for my taste, but I still enjoyed it. I think next time I'll use less curry powder.

I'm not usually a fan of stew, but this one was really good. The chicken was tender and flavorful, and the vegetables were cooked perfectly. I would definitely make this again.

This mulligatawny stew was a hit with my family! The flavors were complex and delicious. I especially loved the hint of curry. I served it over rice, and it was the perfect comfort food for a cold night.
