- Heat olive oil in pot and fry onion for 5 minutes.
- Add sage, celery and peas.
- Combine and cover, cook for 15 minutes.
- Stir regularly.
- Uncover, add cream and heat through.
- Then gently mash to a course mash.
- Season.
