NAVY BEAN SOUP WITH HAM image

Yield 10 - 12 bowls

Number Of Ingredients 8

1 lb. navy beans
1/2 lb. ham with bone
3 quarts liquid (use chicken broth and water)
1 C mashed potatoes
3 med onions, chopped
2 cloves garlic, chopped
1 whole celery bunch, chopped
1 1/4 C parsley, chopped

Steps:

  • Soak beans overnight. Rinse beans after soaking and place in a large stock pot with hame bone. Add 3 quarts liquid. Bring to a boil then simmer for 2 hours. Stir in mashed potatoes, onions, celery, garlic and parsley. Simmer another 1 - 2 hours. Remove ham and cut meat from bone. Return meat to soup, stir and serve.

I'm not a big fan of navy bean soup, but this recipe was actually pretty good. I would definitely make it again.
