No Fuss Mandarin Orange Cake w/ Vanilla Coconut Frosting image

There are a number of recipes out there for this cake but, frankly, I don't care for the pineapple-vanilla pudding frosting. Coconut is much more my style! Plus, the cake is moist enough without the pudding on top.

The cake was a bit dry, but the frosting was delicious. I'll try adding some extra liquid to the batter next time.

The cake was moist and flavorful, but the frosting was a bit too sweet for my taste.

Not as sweet as I expected, but still very tasty. The citrus flavor from the oranges really shines through.
