Number Of Ingredients 9

1 large head of lettuce (your choice). Recommend leaf lettuce, not spring mix.
1 cup cherry tomatoes
1 English cucumber
1 pomegranate
6-8 Calimyrna dried figs
1/2 cup pine nuts roasted
1 cup feta cheese
Mayonnaise (1 cup)
1/4 milk

Steps:

  • Wash lettuce and cut into ribbons. Cut cherry tomatoes in half. Slice pomegranate and de-seed. Collect 1 cup of seeds. Slice figs into small chunks. Cut enough to make 1 1/2 cups. Toss all ingredients into large salad bowl. Mix milk and 1 cup mayonaise so that mixture pours easily. Toss salad lightly with dressing. Add pine nuts and crumbled feta cheese. Toss salad lightly one more time. Add more dressing if necessary. Divide into 8 portions and serve.
