This is the time of year I always have an abundance of okra in the garden, so I'm always looking for new and different ideas on how to use it. This is very good and makes a wonderful side dish to any meal.

Steps:
- 1. Wash okra, drain and slice. Slice the okra a little thinner then you would if you were just frying the okra.
- 2. In large mixing bowl, mix salt, baking power, cornmeal, flour and egg. Add water and mix well. Stir in okra.
- 3. Drop by spoonfuls into small amount of hot oil in skillet and fry as you would a pancake, turning to brown each side. Each side takes about 10 minutes over medium heat.
