When we cook bacon in the south, we save the drippings and use it for flavor in other foods. This is one of my favorite potato recipes

Time 40m

Yield 6 serving(s)

Number Of Ingredients 6

3 tablespoons bacon fat
5 idaho potatoes, thinly sliced
3 slices bacon, diced
1 onion, chopped
salt and pepper
chopped fresh parsley

Steps:

  • Heat bacon fat in cast iron skillet. Add potatoes, bacon, and onion; cook covered over medium heat for 15 to 20 minutes. Shake the pan while the potatoes are cooking so bacon and onion do not burn and turn the potatoes from time to time.
  • Remove cover and cook until golden brown and crunchy, 10 to 12 minutes.
  • sprinkle with salt, pepper, and parsley.

I'm not sure what I did wrong, but my potatoes turned out mushy. I think I might have overcooked them.

These potatoes were a little too greasy for me, but they were still pretty good. I think I'll try using less oil next time.

I was disappointed with this recipe. The potatoes didn't get crispy enough, even after cooking them for longer than the recipe said.

I'm not a huge fan of fried potatoes, but these were surprisingly delicious. The key is to use high-quality potatoes and cook them until they're nice and crispy.
