Onion Roasted Potatoes image

Easy, made with Lipton onion soup mix. Another of my mother's recipes. I think she loved cooking from packaged mixes. This one has a great flavor. I use Yukon Gold potatoes; she usually used new red potatoes.

Time 40m

Number Of Ingredients 4

2 lb small yukon gold potatoes
1 jar(s) cocktail onions (small jar)
1 pkg lipton onion soup mix
3 Tbsp olive oil

Steps:

  • 1. Preheat oven to 425 degrees. Wash potatoes and cut into halves or quarters, depending on size. No need to peel.
  • 2. Drain about 1/2 the liquid off the onions. Place potatoes, onions and remaining liquid, soup mix, and olive oil in a plastic zip-top bag. Work potatoes in bag to combine all ingredients and coat potatoes well.
  • 3. Spread potatoes and onions in a metal baking pan. Bake for 35 minutes, stirring well every 10 minutes or so, until browned and crispy on the outside and soft on the inside. Serve immediately.

These potatoes were a bit bland for my taste. I think I'll add some more salt and pepper next time.

I'm not a big fan of onions, but I actually really enjoyed these roasted potatoes. The onions weren't overpowering at all.
