Oooey, Gooey Rice Krispie Bars image

Ok... I know. Everyone knows how to make Rice Krispie Bars. But, have you ever noticed that sometimes they are ooey, gooey, soft and chewy and other times they are dry and tasteless? It's all in the proportions. This recipe makes a 9x12 pan of thick, moist, "delicious every time" bars, and is my go-to recipe for bake sales, etc....

1 stick butter
1 pkg large marshmallows, 16 oz.
8 c rice krispies cereal

Steps:

  • 1. In a large pot, melt butter on medium heat. Add marshmallows until just melted. Turn off heat and stir in Rice Krispies.
  • 2. Transfer to buttered 9x12 pan and pat down with buttered hands. When cool, I cut into bars and place in individual ziplock bags. Then, into a big basket on the counter for quick snacks, lunch bags and backpacks for the week.
  • 3. Optional: After completing the bars, melt 1 cup of creamy peanut butter with one package of butterscotch chips in the microwave. Spread over bars and refrigerate just until the topping firms up. Then, store at room temp.
