Steps:
- 1. Place turkey cutlets between 2 sheets of wax paper; flatten to 1/8 inch thickness, using a meat mallet or rolling pin,
- 2. Combine flour, salt, and pepper in a medium bowl; stir well. Dredge turkey cutlets in the flour mixture.
- 3. Combine 1/4 cup butter and vegetable oil in a large skillet; cook over medium-high heat until the butter melts. Add cutlets, and saute 30 seconds on each side or until done. Remove cutlets to a serving platter; keep warm. Discard the drippings in the skillet.
- 4. Add wine and orange juice to the skillet; cook over high heat, deglazing the skillet by scraping particles that cling to the bottom. Cook 2 minutes or until the mixture is reduced by about one-third. Add orange rind, sage, and thyme; cook until the sauce thickens slightly. Remove from the heat. Add the remaining 2 tablespoons butter, stirring until the butter melts. Spoon the sauce over the turkey cutlets. Garnish, if desired with parsley.
