ORZO PILAF image

Number Of Ingredients 10

2 TBSP unsalted butter
1 medium onion, chopped fine (about 1 cup)
2 medium garlic cloves, minced (about 2 tsps)
1 lb. orzo
3/4 cup dry vermouth
3 1/2 cups canned low sodium chicken broth
10 oz frozen peas
2 oz Parmesan cheese, grated (about 1 cup)
Pinch of nutmeg
Ground black pepper

Steps:

  • Heat butter in 12 in nonstick skillted over medium high heat, when foaming subsides add onion and 3/4 tsp salt and cook , stirring frequently until onion has softened and is beginning to brown, about 5 mins. Add garlic and cook until fragrant @ 30 secondhhs. Add orzo NS COOK, STIRRING FREQUENTLYWITH HEATPROOF rubber spatula, until most of orzo is lightly browned and golden, 5-6 minutes. Off heat , add vermouth and chicken broth. Return skillet to heat and bring to boil. Reduce heat to medium low and simmer, stirring occaisssssssionally until liquid has been absorbed and orzo is tender, 10-15 mins. With rubber spatula mix in peas, parmesan, nutmeg and pepper to taste. Letstand off heat until peas are heated through. Serve
