The contrast between the soft and fresh avocado and the creaminess of a poached egg is brilliant. Good thing is it's also very healthy and satisfying.

Time 25m

Yield 2

Number Of Ingredients 6

2 small eggs
1 avocado, halved and pitted
2 slices cooked bacon, crumbled
2 teaspoons chopped fresh chives, or to taste
1 pinch dried parsley, or to taste
1 pinch sea salt and ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Crack the eggs into a bowl, being careful to keep the yolks intact.
  • Arrange avocado halves in a baking dish, resting them along the edge so avocado won't tip over. Gently spoon 1 egg yolk into the avocado hole. Continue spooning egg white into the hole until full. Repeat with remaining egg yolk, egg white, and avocado. Season each filled avocado with chives, parsley, sea salt, and pepper.
  • Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon over avocado.

This dish was a bit too oily for my taste. The avocado was very oily, and it made the dish feel greasy. I think I would have enjoyed it more if I had used less avocado, or if I had mashed it with some lime juice and cilantro to help cut down on the o

This dish was a bit too bland for my taste. The avocado and eggs were not seasoned at all, and they were very bland. I think I would have enjoyed it more if I had seasoned the avocado and eggs with some salt and pepper, or if I had added some other s

This dish was a bit too salty for my taste. The bacon was very salty, and it overpowered the flavor of the avocado and eggs. I think I would have enjoyed it more if I had used less bacon, or if I had used a different type of bacon that was less salty

This dish was a bit too spicy for my taste. The chili flakes were a bit overpowering, and they masked the flavor of the avocado and eggs. I think I would have enjoyed it more if I had used less chili flakes, or if I had omitted them altogether.

This dish was a disappointment. The avocado was not ripe enough, so it was hard and bitter. The eggs were also overcooked and rubbery. I would not recommend this recipe.

I thought this dish was just okay. The eggs were cooked well, but the avocado was a bit bland. I think I would have enjoyed it more if the avocado was seasoned with some salt and pepper, or if it was mashed with some lime juice and cilantro.

This dish was a bit too rich for my taste. The avocado and bacon were very creamy and heavy, and the eggs were a bit overcooked. I think I would have enjoyed it more if the eggs were cooked sunny-side up and the avocado was mashed with some lime juic

I've made this dish several times now, and it's always a hit. My family loves the creamy avocado and perfectly cooked eggs. I usually add a sprinkle of chili flakes for a little extra spice. This is a great recipe for a quick and easy weeknight meal.

This dish is so simple to make, but it's packed with flavor. The eggs are cooked perfectly, and the avocado and bacon add a creamy, smoky flavor. I love that this dish is also paleo-friendly, so I can enjoy it without feeling guilty.

I'm not usually a fan of avocados, but this dish changed my mind. The eggs and bacon were cooked perfectly, and the avocado added a creamy, rich flavor that I loved. I'll definitely be making this again!

This dish was absolutely delicious! The avocados were perfectly ripe and creamy, and the eggs were cooked to perfection. The bacon added a nice smoky flavor, and the chives gave it a fresh, herby taste. I will definitely be making this again.
