Pasta N Beans image

This makes for a healthy meal.

Number Of Ingredients 9

1 c diced sweet green pepper
1/2 c chopped onions
2 clove garlic, minced
1 tsp dried oregano
1/2 tsp each ground cumin and crushed red pepper flakes
2 c tomato sauce
1 can(s) black beans, drained and rinsed
8 oz uncooked medium sized shell shaped pasat
1/2 c shredded reduced fat monterey jack cheese

Steps:

  • 1. Spray a large saucepan with non stick spray. Add first 6 ingredients and cook over medium heat for 5 minute, until vegetables are softened. Add tomato sauce and black beans. Bring to a boil. Reduce heat to medium low. Cover and simmer for 5 minutes.
  • 2. Meanwhile, prepare pasta shells according to package directions. Drain. Add shells to sauce and mix well. Ladle into individual serving bowls and sprinkle with cheese.
