Pasta with Marinated Tomatoes image

Number Of Ingredients 8

5 cloves Garlic, thinly sliced
1/2 cup Olive Oil
2 pounds Heirloom Tomatoes
3/4 cup Basil
3 tablespoon Capers
2 teaspoons Lemon zest
1/4 teaspoon Red pepper flakes
1 pound Pasta

Steps:

  • Thinly slice garlic. Heat oil over low heat and add garlic. Cook until pale gold, about 10 minutes.
  • Strain and reserve in separate custard cups to cool.
  • Slice tomatoes into bite-size pieces. Combine with half the basil, the capers, lemon zest and flakes in large bowl. Season with salt.
  • About 30 minutes before serving, pour garlic oil and garlic chips over tomato mixture.
  • Cover and let marinate, tossing occasionally, 30 minutes.
  • Meanwhile, cook pasta. Drain.
  • Add warm pasta to tomato mixture and toss gently to combine.
  • Top with remaining basil (torn if too large) and lemon zest. Maybe add some Parmesan or Goat Cheese.
