PEA - CHEESE SALAD image

Number Of Ingredients 11

2 c. shelled peas or 1 (10 oz.) pkg. frozen peas or 1 (17 oz.) can peas
1 c. cubed cheddar cheese
2 hard-cooked eggs, chopped
1/4 c. chopped celery
2 tbsp. chopped onion
2 tbsp. chopped pimento
1/3 c. mayonnaise or salad dressing
1/2 tsp. salt
1/4 tsp. bottled hot pepper sauce
1/8 tsp. pepper
noodles, cooked

Steps:

  • 1. Cook fresh of frozen peas, drain and cool. Drain canned peas. In large bowl combine peas, cheese cubes, hard-cooked eggs, celery, onion and pimento. Combine mayonnaise or salad dressing, salt, hot pepper sauce and pepper. Add to pea mixture; toss to combine. Cover and refrigerate several hours or overnight. Add noodles of choice might have to adjust mayo to own preference

This salad was a bit bland for my taste. I think it needed more seasoning, maybe some salt, pepper, and garlic powder. I also would have liked it better with a different type of cheese, like a sharp cheddar or a blue cheese.

I love this salad! It's so easy to make and always a crowd-pleaser. I usually add a little bit of diced ham or turkey for extra protein, and sometimes I'll use a different type of cheese, like Swiss or Gouda. It's always delicious!
