Peanut Butter Oatmeal Squares image

The combination of peanut butter and oatmeal makes these bars popular. My children love them with a cold glass of milk, and I've taken them to many church suppers, too.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2/3 cup peanut butter
2 eggs
1/3 cup water
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 cups quick-cooking oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
ICING:
1/3 cup butter, softened
2/3 cup peanut butter
2 cups confectioners' sugar
1/3 cup 2% milk

Steps:

  • In a large bowl, cream the shortening, sugars and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in water and vanilla. Combine the flour, oats, baking powder, baking soda and salt; beat into creamed mixture just until combined. Pour into a greased 15x10x1-in. baking pan. , Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. , In a small bowl, beat the icing ingredients until smooth. Pour over warm bars. Cool on a wire rack.
