Peppery Peanut Brittle image

A touch of hot pepper sauce gives a unique zip to this crunchy confestion

1 1/4 c salted dry roasted peanuts
1 1/2 tsp hot pepper sauce
1/4 tsp ground cinnamon
1 c sugar
1/2 c corn syrup, light
1 tsp butter
1 1/2 tsp baking soda
1 tsp vanilla extract

Steps:

  • 1. Coat a 15 x 10 x 1 inch pan with nonstick cooking spray...set aside. In a bowl toss the peanuts hot pepper sauce and allspice until evenly coated..set aside.
  • 2. In a 2 Quart microwave-safe glass bowl combine sugar and syrup. micro on high cook uncovered for 4 minutes, stir in peanut mixture, stir til well blended.
  • 3. Heat on high for 4 or 5 minutes longer or until mixture turns a light amber color {mixture will be very hot}..Stir in butter micro on for 45 seconds longer,,,quickly stir in baking soda and vanilla until mix foams and becomes light colored. Immediately pour mixture pan and spread thin with spatula. cool and break into pieces....this was tested in 850 watt microwave.
