Perfectly Seasoned Potato Bites image

I find that since we became empty nesters, we often have a hard time going through an entire bag of potatoes. This is a wonderful, quick and easy recipe to use when you need something new. Serve with Ranch dressing, ketchup or sour cream with chives and crumbled bacon for a delicious treat that your family will enjoy.

IN A LARGE ZIPLOCK BAG, COMBINE:
1 tsp paprika
1 tb dried parsley flakes
1 tsp onion powder
1 1/2 tsp garlic powder
1 tsp lawry's seasoning salt
1/4 tsp black pepper (1/2 tsp if you like spicy)
2 tb olive oil
4 cups yukon gold potatoes cut into bite sized cubes (1/2"-3/4" cubes) i leave the peel on.

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Place seasonings and olive oil in a large ziplock bag. Toss to combine.
  • 3. Add 4 cups of bite sized cubed potatoes. Again, toss to combine.
  • 4. Place mixture on a foiled covered 13x9 cookie sheet with sides. Bake at 400 degrees for 30 minutes. Serve with Ranch dressing, ketchup or sour cream with chives and crumbled bacon.
