PESTO SALAD WITH SMOKED HAM AND PENNE image

Yield Serves four but can be increased easily

Number Of Ingredients 8

One generous tablespoon fresh basil pesto per person
1 head Romaine lettuce broken into 1 inch pieces
1 pound smoked ham (thinly julienned)
1/2 red onion thinly sliced
1/2 cup pitted black olives sliced in half or quartered
1/2 pound cooked, cooled Penne Pasta
1/4 to 1/2 cup fresh grated Parmesan
Balsimic vinegar (to taste)

Steps:

  • Assemble all ingredients in a large salad bowl and toss. Have "extra" balsimic on the side, should your guests like even more I like to serve this with a nice artisan bread and a chilled Chardonnay
