Steps:
- 1. Place the ground beef in a mixing bowl. Add salt, pepper, oregano and cumin. Combine thoroughly. Set aside.
- 2. Heat the oil in a frying pan and saute the onions, jalapeno pepper and garlic until soft.
- 3. Crumble the ground beef mixture into the onion mixture and cook until the meat is slightly brown. Add the flour to the ,ixture and stir until flour is combined well.
- 4. Add the beef stock, tomato sauce and potatoes. Stir well, cover and cook on medium-low heat for another 20 minutes.
- 5. Uncover, add olives, if using. Cook, uncovered, another 15 minutes or until liquid has reduced but meat is still moist.
- 6. Add more salt and pepper if needed.
- 7. Serve hot with refried beans, rice, your favorite salsa and hot flour tortillas. Also great for making burritos or empenadas.
