Steps:
- 1. Beat eggs until creamy. Add oil, 7-Up, dry cake mix, pudding mix, and rum flavored extract. Mix well and add drained pineapple; stir in pecans. Bake in a 13x9 in. greased baking dish at 350 degrees for 25 minutes or as directed for a 13x9 in. cake pan. Cool and frost.
- 2. Frosting: Beat together the cream cheese and butter until it is a creamy blend. Add sugar slowly while beating. Mix in the coconut extract. Frost cake and sprinkle with coconut. Option: If you prefer, add coconut to icing before frosting.
