Pinto Bean Pie I image

Unusual pie that doesn't taste like it sounds.

1 cup cooked pinto beans with juice
4 eggs, room temperature
3 cups white sugar
1 tablespoon vanilla extract
1 cup butter, melted
1 cup flaked coconut
2 (9 inch) deep dish frozen pie crusts, thawed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mash beans until very smooth; set aside. In a large bowl, beat eggs; mix in beans, sugar, vanilla, melted butter or margarine, and coconut until well blended. Pour filling into two pie crusts.
  • Bake until filling is set, about 1 hour.
