Polynesian Chicken image

This recipe came from a diabetic website. It's easy and very tasty. It's a favorite of mine.

Number Of Ingredients 4

2 lb boneless chicken breasts
4 oz fat-free red russian dressing
1/2 c sugar-free apricot preserves
1 pkg dry onion soup mix

Steps:

  • 1. Preheat the oven at 350F.
  • 2. Wash the chicken and cut into 2" pieces, and place pieces in a small casserole dish. Mix the remaining ingredients and pour 1/2 of the sauce over the chicken. Cover and bake for 20 - 25 minutes.
  • 3. Stir in the remaining sauce and bake uncovered another 20 minutes.
