Pork Chops Deluxe image

I saw a similar recipe in a book, but did not have all of the ingredients it called for. I then substituted what I had on hand.

Number Of Ingredients 9

4 bone-in sirloin pork chops
2 Tbsp water
14 1/2 oz diced tomatoes (fresh or from can)
1 can(s) condensed golden mushroom soup, undiluted
1 medium onion, thinly sliced
2 tsp ground mustard
1/2 lb fresh baby portobello mushrooms, sliced
3 c hot cooked rice
2 Tbsp minced fresh parsley

Steps:

  • 1. Coat skillet with cooking spray; brown pork chops on both sides. Remove and set aside. Add water, scraping bottom of the skillet to loosen any browned bits.
  • 2. Drain tomatoes, reserving juice; set tomatoes aside. Stir in the juice, soup, onion, mustard, mushrooms and salt if desired to skillet.
  • 3. Return chops to skillet. Cover and simmer for 30 minutes or until a meat thermometer reads 160°. Stir in tomatoes; heat through. Combine rice and parsley. Serve the pork chops and sauce with rice.
