Steps:
- 1. Make ahead and chill for easy assembly: pork roast, rice, and garlic/soy butter.
- 2. To make garlic/soy butter: Whip 2 tbsp. soy sauce and minced garlic with softened butter. Chill to use later.
- 3. In a saute pan heat olive oil. Add green onions and vegetables. Sprinkle rice wine vinegar over vegetables and saute 5 minutes over med-high heat until just starting to soften.
- 4. Heat an electric frying pan, wok, or large saute pan. Add cold rice, pork, and vegetables. Dot garlic/soy butter around the rice. Add remaining 2 tbsp. soy sauce. Cook 10-15 minutes, turning often until rice is browned slightly and vegetables are cooked to your liking.
