Potato Bacon Chowder image

Web Photo This is my definition of comfort food. It's easy and quick to prepare. Serve it with fresh bread & that's a meal for me.

Number Of Ingredients 10

8 slice bacon - chopped
1 c onion - medium chop
3 c potaoes, diced (i like ukon gold)
1 1/2 c water
1 can(s) cream of chicken soup
1 c sour cream
1 3/4 c milk
1/2 tsp salt
1/2 tsp black pepper
OPTIONAL: SHREDDED CHEDDAR CHEESE & DICED TOMATOES

Steps:

  • 1. 1)Fry bacon until crisp in a large heavy pot. Add onion & saute 2 - 3 minutes.
  • 2. 2) Pour off fat; Add water and potatoes. Bring to a boil; cover & simmer 10-15 minutes or until potatoes are tender.
  • 3. 3) Stir in canned soup, sour cream and milk. Add salt and pepper. Heat to serving temperature.
  • 4. 4) Serve with the optional shredded cheese and tomatoes sprinkled on top.

This chowder was easy to make and turned out great! I used a combination of russet and Yukon Gold potatoes, and I added some chopped carrots and celery for extra flavor. It was a big hit with my family and friends.
