Steps:
- Melt butter and stir into the potato with the salt. Mix in the flour quickly and thoroughly, and knead lightly. Divide dough in two and roll out each half on a board dusted with flour to form circles about the size of a dinner plate. Cut into quarters (farls). Heat the oil in a heavy-based frying pan over high heat, reduce to medium heat and fry farls for about 3 minutes on each side. Drain on paper towels.
