PUMPKIN APPLE BARS
4 eggs
1 2/3 cups sugar
1 Cup veg. oil ( or 1/2 cup applesauce for 1/2 c of the oil)
1 can 15 oz can of pumpkin, ( not the pumpkin pie mix)
2 Cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
1 1/2 Cup fresh apples, peeled, chopped & diced ( fuji or gala)
CREAM CHEESE FROSTING
8 oz cream cheese, softened
1/2 C butter, room temperature
2 Cups powdered sugar
1 Tsp cinnamon
1 Tsp vanilla extract

Steps:

  • 1. Preheat Oven @ 350. Grease a 10 X 13 pan Peel Chop and dice apple and set aside.
  • 2. Mix Eggs, sugar, Oil & pumpkin well with electric Mixer, til light and fluffy.
  • 3. Stir together Dry Ingredients, Flour, Baking Pdr, Soda, Cinn, nutmeg, & Salt. Now, Add 2 Tbs of the Flour Mixture to Fresh Diced and Chopped apples. Toss very well. Set aside the apples.
  • 4. Add all the Dry ingredients to the Pumpkin mixture, Mix on Low speed til batter is smooth and wel blended. Now you can add the Floured apples and stir well to Blend.
  • 5. Pour your batter evenly into Greased 10X13 pan. Bake @ 350 for 30 min. Let Cool completely, before frosting. Frost with cream Cheese Frosting. Cut into 2 X 3" bars and enjoy. I betcha you can't have just one!!!
  • 6. FROSTING: Mix the Cream Cheese, & Butter in a med Bowl, using an electric Mixer til smooth and fluffy. Add; Pdr Sugar, mix well. STIR in Vanilla, and Cinnamon. Frost your Completely Cooled Bars. . . Now Enjoy
